Aval-Coconut Laddu is a quick and nutritious laddu

Ingredients:

Light aval (grated coconut) – 1 cup Grated coconut – 1/2 cup Jaggery grated/powdered – 1/2 cup (according to sweetness) Ghee – 2 tablespoons Cardamom powder – 1/2 teaspoon Cashew nuts (finely chopped) – 2 tablespoons

Preparation:

Heat ghee in a pan and roast the cashew nuts and set aside. Add the aval to the same pan and roast well on low heat. When the aval becomes crispy, turn off the heat and set aside. Add the grated coconut and heat it slightly. There is no need to change the color. Put the roasted aval in a mixer and grind it into a fine powder. In a large bowl, add the ground aval, grated coconut, jaggery, cardamom powder, and roasted cashew nuts and mix well. Rub well with your hands and then make small balls and make laddus. These can be stored in an airtight container.
